As you can see, the Underground Butcher Shop sandwich menu is an education it itself. It’s full of interesting ingredients, such as ‘nduja (doo-yah) vinaigrette (vin-uh-GRET), dressing made with spreadable Italian pork sausage; cornichons (kor-nee-SHOHN), a.k.a. mini pickles; and aioli (EYE-oh-lee), garlic mayonnaise. It’s okay if you haven’t heard of them before. It’s extraordinary fare. So if you’re looking for a little edible adventure, treat yourself to a sandwich from Underground Butcher and pat yourself on the back if you learn something new.
